Valentine's Day recipes

Perfect for: Dinner parties, romantic get-togethers, potlucks and luncheons. 
Make and take: Whip together up to several hours in advance and chill until serving time. 
Made famous by: Stephanie Lotti of Atlanta, who said she came up with the recipe "the same way I come up with all my recipes -- by opening all my kitchen cabinets one by one and saying, 'What might go together?' " 

 

Hands on time: 5 minutes  Total time: 5 minutes  Serves: 24

Ingredients:

    1 (8-ounce) package reduced-fat cream cheese 
    1 (8-ounce) carton reduced-fat sour cream 
    1/3 cup oil-packed sun-dried tomatoes, drained 
    1/4 teaspoon finely chopped fresh rosemary 
    Dash hot sauce 
    Salt and pepper to taste 

Instructions:

In the bowl of a food processor, combine the cream cheese, sour cream, tomatoes and rosemary. Process until well-blended (it's OK to leave flecks of sun-dried tomato). Season to taste with hot sauce, salt and pepper. Serve with rosemary crackers or a baguette of rosemary bread.

Notes:

Rosemary crackers, such as those made by Carr's, enhance the rosemary flavor. 

Although Lotti developed this easy dip for a Thanksgiving dinner, its bright red color adds a nice touch to Valentine's Day, too. While packed with flavor, it has the added advantage of being onion- and garlic-free.

Nutrition:

Per tablespoon: 34 calories (percent of calories from fat, 58), 2 grams protein, 2 grams carbohydrates, trace fiber, 2 grams fat (1 gram saturated), 7 milligrams cholesterol, 86 milligrams sodium.
